The pages of The Aviary Cocktail Book are as visually intriguing as the drinks made at the bar. Through their back and forth with the chefs, Hemberger says he learned that chefs in restaurants are constantly tweaking, changing and honing their recipes. This insight led Hemberger to reveal in the book, the evolution of some drink recipes, with both early and later evolutions of the same cocktail. The two also, in asking a lot of questions, got way more material than simple answers, which led to about 1, sidebars throughout the book. The recipes that were chosen were to show off the range of techniques, ingredients and other interesting elements that come together in the cocktails at The Aviary.
Grant Achatz and Nick Kokonas, the creators and owners of Alinea in Chicago, have teamed up with Allen and Sarah Hemberger, an artist duo from California, to make an extraordinary cookbook for their cocktail bar The Aviary. We opened the Aviary in Chicago in ; it was born out of our passion for innovation and challenging the status quo.
